How to Make Eclairs: Temps for Pastry, custard, and Baking

LET'S START

Preheat to Perfection: Begin by preheating your oven to a precise 375°F (190°C). This temperature ensures a golden, crisp eclair shell.

Pastry Pros: When making the pastry dough, ensure your water, butter, and flour mixture cooks at around 212°F (100°C). This will give your eclairs the perfect texture.

Custard Control: While preparing the custard filling, cook it on medium heat

maintaining a temperature of 170-175°F (77-80°C) to achieve a creamy consistency.

Piping Hot Skill: Use a piping bag to form the eclair shells. Bake them at 375°F (190°C) until they puff up and turn a beautiful shade of golden brown, usually around 25-30 minutes.

Cooling Calmly: After baking, let the pastry shells cool at room temperature, preventing sogginess. When the custard and pastry are cooled, fill the eclairs to perfection.
